Tasting Notes
Nose: cherry, vanilla, spice, black cherry. Palate: balanced, oak is present but not overpowering, cranberry, black cherry, cassis, tobacco, balanced but present acidity, with medium tannins. Finish: lingering black cherry, blueberry, drying tannins, and blueberry.
Winemaker Notes
The Petit Verdot was destemmed and immediately inoculated. Half the fruit was fermented in one ton bins, receiving punch downs twice a day for two weeks, with the juice reaching into the 90’s during fermentation. The remaining fruit was transferred to a large tank and pumped over twice a day for twelve days to extract more tannin and inject oxygen for yeast health and tannic stabilization. Following primary fermentation, the skins were pressed and the wine was put into barrel, where it then underwent malolactic fermentation. 11% of the wine was aged in new American Oak, 20% was aged in second use American oak barrels while the remainder was aged in neutral American barrels.
